Apple's iChat works with FireWire cameras. The best video cameras use 
FireWire so that would give you better results.

Apple's iChat supports 640 x 480, which is the maximum you can get out of 
a video camera. To get that you need a Mac with at least a 1.93 MHz Core 
Duo processor and a 900 kbps Internet connection. It automatically 
adjusts to the best your equipment will support.

Apple's iChat works with AOL's free AIM system so that going to be easy 
on the setup on the other end of the line. It also does ICQ, etc.

I suggest borrowing a Mac laptop to make the whole thing very easy.
