Under Tools => Options => Mailboxes the dialog has checkboxes for the columns to be shown in the table of contents for the mailboxes, but it's apparently one dialog that applies to all mailboxes. You might try changing one of the columns in that dialog and then changing it back to see if it resets the columns being displayed. I know I can individually adjust by dragging the column widths in each TOC independently/separately, so they can/do differ from one mailbox to the next. The .toc file itself is not an ASCII file, so there is no easy way to hack it.
If you know how to use Usenet Newsgroups, comp.mail.eudora.ms-windows is likely to provide you with an answer. Or the equivalent Mac group, if you are running Eudora on the Mac OS.
