Pork Tenderloin with Cranberry Topping
 
Sauce:
1 can whole cranberry sauce
2 Tbsp dry sherry
¼ tsp cinnamon
1/8 tsp salt
½ tsp grated orange peel
2 Tbsp orange juice
2 tsp corn starch
 
Combine sauce ingredients, stir and cook on low heat on stove top until
thickens, about 5 minutes.
 
Sprinkle pork tenderloin with salt, pepper and garlic powder.  
 
Cover meet with sauce, roast at 325 for 45 minutes.
 
Remove pork from oven and cover with foil, let stand 10 minutes before
slicing.
 
Double above sauce and divide in half after  cooking on stove top, reserving
half for garnish when serving pork.
