this is how i made it, but it became a lil thin. none the less, good :)
servings; 6 (pretty hungry ppl!)
1 head broccoli
1 head cauliflower
3 medium carrots
1 small onion
about 12 dl (5 cups) of water
1 buljong cube
salt, pepper and other spices to taste
1 tablespoon of cornstartch
(a bit of cream/milk) *
1. wash, and peel the vedgitables.
2. cut them, and chop the onion
3. bring the water buljoncube and salt to a boil and add the vedgitables
4. let all simmer covered for about 10-15 minutes untill vedgitables are
tender
if you cut the vedgitables in sma enough pieces and you wanna eat it as
this, skipp next step.
5. let the soup go through a blender/foodprocessor, untill it is smooth.
6. put the soup back on the stovetop, and add spices, and cornstartch if you
want the soup, add spices as well. thicker.
7. let it heat through, and serve.
tip: use the stem of the broccoli too, but cut of the outside of it.
tip 2: milk/cream; you can then reduce the amount water, at least if using
milk. and the milk can simmer together with the rest of the vedgies for
those 15 mins)
tip 3: i added some chunks of cheese while i sloly heated the soup, and
allowed them to melt. became good!
