Cream Cheese Pumpkin Pie

 

9" unbaked pie shell

8 oz. cream cheese, softened

1/4 c. sugar

1/2 tsp. vanilla

1 egg

 

Method

 

1. Combine cream cheese, sugar and vanilla. 

2. Add egg; mix well. 

3. Spread in bottom of pie shell.

 

Filling

 

1 1/4 c. canned or cooked pumpkin

1/2 c. sugar

1 tsp. cinnamon

1/4 tsp. ginger

1/4 tsp. nutmeg

2 eggs

1 c. evaporated milk

 

Method

 

1. Combine pumpkin, sugar and spice. 

2. Beat in eggs and milk carefully. 

3. Pour over cheese mixture. 

4. Bake at 350 degrees for 1 hour. 

5. Cool.
