Claudia, We had a pumpkin shortage up here this year. Our farmers said they would have pumpkins for the locals at the farm stands but would not have any to ship out to the canners.
That being said. I would suggest sweet potato or squash as substitutes. It isn't exactly the same, but can be very similar.
