I don't see why not. Do you not like cheddar? Maybe half and half of both
cheeses?

Easy Cheese Bake
4 slices soft white bread
3 large eggs
1 1/2 cups milk
1/4 cup minced onion
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded sharp Cheddar cheese
Butter a 9 inch square casserole dish. Arrange bread in an even layer,
cutting some slices in half if necessary so that they all fit. Preheat
oven
to 375 degrees. In bowl, whisk together eggs, milk, onion, Worcestershire
sauce, salt and pepper. Stir in cheese. Pour mixture evenly over bread.
Set
dish aside at room temperature for 15 minutes. Bake for about 30 minutes,
or
until top is puffed and lightly browned. Sprinkle with additional shredded
Cheddar cheese, if desired. Serve hot.
Makes 4 servings.
