Here are a couple of slow-cooker chili recipes. I have lots more recipes
on the home system and if these are not enough I can look for more when I
get back home next week.
Easy chili
Makes 10 to 12 servings
1 lb. ground beef
1 onion, chopped
1 green pepper, chopped
1 1/2 tsp. salt
1 tbsp. chili powder
2 tsp. Worcestershire sauce
28 oz. can tomato sauce
3 16 oz. cans kidney beans, drained
14 1/2 oz. can crushed or stewed tomatoes
6 oz. can tomato paste
2 cups of graded cheddar cheese
1. Brown meat in skillet. Add onion and green pepper halfway
through browning process. Drain. Pour into slow cooker.
2. Stir in remaining ingredients except cheese
3. Cover. Cook on high 3 hours, or low 7 to 8 hours.
4. Serve in bowls topped with cheddar cheese.
Note:
This chili can be served over cooked rice.
Favourite chili
Makes 6 servings
2 16 oz. cans red kidney beans, drained
2 14!/2 oz. cans diced tomatoes
2 lbs. ground beef , browned and drained
2 medium onions, coarsely chopped
1 green pepper coarsely chopped
2 garlic cloves, minced
2-3 Tbsp. chili powder
1 tsp. pepper
2 1/2 tsp. salt
1. Combine all ingredients in slow cooker in order listed. Stir
once.
2. Cover. Cook on low 10 to 12 hours, or high 5 to 6 hours.
Variations:
1. Top individual servings with green onions, sour cream, and
cheese.
2. Increase proportion of tomatoes in chili by adding 8 oz. can
tomato sauce before cooking,
