Pumpkin Pancakes, Tulsa World, 12/11/2009
1 cup flour
1/2 t. salt
2 t. baking powder
1/2 cup sugar
2 t. cinnamon
2 eggs
1 cup milk
2 tablespoons oil
1/2 cup canned pumpkin puree

Mix dry ingredients together, and now, add the wet ingredients. Stir just until dough comes together.
Measure out one fourth cup of the batter for each pancake.
Cook over medium heat on cast iron or nonstick skillet.
Cook until bubbles appear, and then flip.
Top with butter and a good dose of syrup!

The Aunt Jemima mix seems to make lighter and fluffier pancakes. However, when you make pancakes from scratch, in my opinion, there is nothing better.

BISQUICK PANCAKES

2 cups Bisquick

1 and 1/3 cups milk.

Beat all ingredients together with a whisk. Whisk until batter is
smooth.
Pour batter, using a 1/4 measuring cup, onto a hot griddle. Bake, until
bubbles appear.  Turn to the otherside.

When the bottom of the pancake feels crisp to me, I then flip the
pancakes
to cook on the other side.
