CRACKER PIE (MOCK APPLE PIE) Also called mock apple pie, this dessert is more pudding than pie. This recipe is from "James Beard's American Cookery" (Galahad Books, 1972).
St. Paul Pioneer Press Makes 8 servings. 3 egg whites 1/4 teaspoon cream of tartar 1 cup sugar 1/2 teaspoon vanilla 1/2 or 3/4 cup coarsely chopped, lightly toasted walnuts 1 cup soda crackers or rich round crackers crushed in hand (about 10 small soda crackers or about 16 round crackers) 1/2 to 1 cup whipping cream, whipped To prepare oven, pie pan: Preheat oven to 325 degrees. Lightly oil 9-inch pie pan. To make pie: Beat egg whites until frothy. Add cream of tartar. Beat until small bubbles begin to form. Gradually beat in sugar and vanilla. Beat until mixture is stiff and granules of sugar have dissolved. Fold in nuts and crumbled crackers. To bake and serve: Pile roughly into prepared pie pan. Bake for 35 to 40 minutes. Cool on rack. Chill in refrigerator.
