VICEROY CHOCOLATE FUDGE CAKE

   1/2 cup butter, softened

   1 cup sugar

   4 eggs

   1 cup sifted flour

   1 teaspoon baking powder

   1 can (1 pound) chocolate syrup

   1 cup chopped walnuts

   1 teaspoon vanilla extract

   Preheat

 oven to 350 degrees f. Grease 10-inch tube pan; dust pan with flour. Cream 
butter

in bowl; gradually add sugar and beat until light and fluffy. Add eggs one at a 
time;

beat well after each addition. Sift flour and baking powder together into 
separate

bowl. Alternately add flour mixture and chocolate syrup to batter mixture. Add 
nuts

and vanilla. Pour batter into prepared pan; bake for 50 to 60 minutes. Turn pan 
upside

down on wire rack; cool cake in pan. This moist cake needs no frosting.  Enjoy.

Ingredients
4 pounds beef roast 
2 cloves garlic 
2 tablespoons basil, dried or 1/2 cup fresh 
1 teaspoon dried oregano 
Salt 
Pepper 
1 large can Italian tomatoes with basil or one pack dried tomatoes 
1 onion, chopped 
1 750 ml bottle Italian red wine 
Instructions
Cut slits in the roast and insert pieces of garlic and onions. 
  
Brown roast over med-high heat. Add all ingredients and enough water to cover, 
cook 3-4 hours until tender, covered over low heat. 
  
Reduce sauce to two cups.  
Notes
The better the wine, the better the roast. Reduce the cooking liquid at the end 
and serve over polenta-wonderful!


  
Roast Beef Quiche
Description
A quiche that can serve triple-duty: Breakfast, lunch, or dinner. It's the 
perfect blend of flavors, with enough beef to make it hearty, yet not heavy. 
Serve this easy roast beef quiche any time you feel like making an easy, tasty

Cooking Time: 35 min 

Ingredients
1 unbaked pastry shell (9 inches) 
1 3/4 cups finely chopped cooked roast beef 
1/4 cup chopped green onions 
1 tablespoon all-purpose flour 
4 eggs 
1/2 cup evaporated milk 
1 tablespoon steak sauce 
1/8 teaspoon each dill weed, dried basil and dried oregano 
salt and pepper to taste 
2 cups (8 ounces) shredded cheddar cheese 
1/2 cup chopped green bell pepper 
Instructions
Preheat oven to 450°F.
  
Line unpricked pastry shell with a double thickness of heavy-duty foil. 
  
Bake at 450°F for 5 minutes; remove foil. 
  
Bake 5 minutes longer. 
  
Reduce heat to 375°F. 
  
Sprinkle beef and onions into the crust. 
  
In bowl, beat the flour and eggs until smooth. 
  
Add milk, steak sauce and seasonings; beat until smooth. 
  
Stir in cheese and green pepper. 
  
Pour into crust. 
  
Bake for 25 minutes or until center is set.

Try something new with your roast beef and create a sweet plum sauce. This 
delicious recipe is easy to make and great for making sandwiches with the 
leftovers.

Ingredients
3 1/2 pounds rump/round/sirloin-cut roast 
Salt and pepper to taste 
4 cups artificially sweetened plums (reserve syrup) 
1/4 teaspoon salt 
1/8 teaspoon pepper 
1 tablespoon arrowroot 
1/3 cup unsweetened frozen orange juice concentrate 
2 tablespoons Worcestershire sauce 
1/8 teaspoon Tabasco sauce 
Instructions
Trim fat from roast before roasting. salt and pepper. Place roast on rack; bake 
at 325 degrees F for 1-1/2 hours. Trim remaining fat from roast. 
  
Drain and pit plums. Save 3/4 cup syrup. Puree plums until smooth; add syrup 
and remaining ingredients. Blend until smooth. In medium saucepan, heat to 
boiling. Serve over Roast Beef.

3 pounds round tip roast or brisket, trimmed of fat 
2 tablespoons cracked black pepper 
2 cloves garlic, minced 
3 tablespoons balsamic vinegar 
1/4 cup soy sauce 
2 tablespoons Worcestershire sauce 
2 teaspoons dry mustard 
Instructions
Rub cracked black pepper and garlic on to roast. Put roast in slow cooker. Make 
several shallow slits in top of roast. 
  
In a small bowl, combine remaining ingredients and pour over meat. 
  
Cover; cook on Low 8 to 10 hours or on High 4 to 5 hour
