Hi Charlotte and List, Made this a couple weeks back and it was a big hit in 
our house. I had it cold for lunch the next day and it was delicious cold too.

Chicken Baked in Spicy Yogurt - 2g Carbs, 0g Fiber
From: The Healthy Home Style Cookbook, published by
the American Diabetes Association.
I used 3-1/2 lbs skinned drumsticks and served the finished
product at a picnic-on-the- porch. Rated superb finger food.
Looking for a summer picnic idea? These drumsticks can be
made ahead of time and packed up for an outdoor feast.
Energy-saving tip: Plan to make this as part of an oven-cooked meal.

Number of Servings: 8
Serving Size: 1/8 of recipe
3 1/2 lb chicken legs, skinned
1 cup plain low-fat yogurt
1/2 tsp cumin
1/2 tsp dry mustard
1/4 tsp crushed red pepper flakes
1/4 tsp ground ginger
1 clove garlic, minced
1/2 cup scallions, including green part, thinly sliced
1. Rinse chicken under cold, running water; dry with paper towels.
2. Stir together all the other ingredients, except scallions.
3. Add chicken and turn pieces to coat with yogurt mixture. Cover and
refrigerate for 8 hours or longer.
4. Spray 13x9-inch pan with nonstick cooking spray.
5. Arrange chicken in pan. Cover with remaining sauce.
6. Bake uncovered at 350 degrees F for about 1 hour.
7. Garnish with scallions.
