Aunt Pat's Baked Apples 4 even baking apples like Rome Beauty or Pippin
Water, lemon juice For Filling: 3 tablespoons butter or margarine 2 tablespoons brown sugar 1 tablespoon all-purpose flour 2 teaspoons ground cinnamon 1 teaspoon ground cloves 3 tablespoons chopped walnuts 3 tablespoons grated coconut Rinse apples. Cut in halves. Core. Do not peel. Place apples in cold water with a little lemon juice. Prepare filling. Melt butter in a saucepan. Add brown sugar, flour, cinnamon and cloves. Heat. Add chopped nuts and coconut. Mix to blend. Remove apples, pat dry. Place apple halves in an oven proof dish. Fill holes with nut mixture and mound filling on top of each apple. Bake apples at 350 degrees for about 35 minutes, or until tender and filling is golden brown. Serve apples warm with whipped cream or vanilla ice cream. Tips: You can prepare the filling in advance, cover and refrigerate. Warm at least to room temperature before filling apples. Microwave Directions: Rinse apples. Cut in halves. Remove core. Do not peel. Place in a bowl with water and a little lemon juice. Prepare filling. Combine brown sugar, flour, butter, cinnamon and cloves in a microsafe bowl or measuring cup. Microwave on high for about 20 seconds until butter has softened. Stir to blend. Add chopped nuts and coconut. Mix to blend. Remove apples, pat dry. Arrange apples in a microsafe baking dish. Spoon topping over apples, filling holes and mounding topping. Cover dish with waxed paper. Microwave on high for about 5 minutes, turning dish once if microwave oven is not a rotating one. Check for doneness. Apples should be soft but not mushy. If too hard, microwave on medium for another 2 to 3 minutes. Cooking time depends on size of apples, ripeness and selection. Serve apples warm with whipped cream or vanilla ice cream. Remember: For microwaving, select even baking apples, not too tart. In a microwave oven, it is easy to cook 1 apple at a time, if you need just one. Place apple in a small microsafe dish just large enough to hold the apple.
