Vegetable Rarebit

1 3/4 cups (5 ounces) grated American cheese or sliced, packaged variety

1/2 cup Pet Milk

1/2 teaspoon salt

1/2 teaspoon dry mustard

1 1/2 cups canned kidney beans, drained

4 slices bread, white or whole wheat

2 large fresh tomatoes, cut in 1/2 inch slices or 1 1/3 cups drained canned
tomatoes

1/4 teaspoon salt

Few grains pepper

For cheese sauce, mix together grated cheese, Pet Milk, 1/2 teaspoon salt
and dry mustard. Cook over boiling water until cheese melts and mixture is
smoothe, stirring frequently. Add kidney beans and keep warm until needed.
Turn on oven and set at 375 degrees. Toast bread on 1 side only, then put
bread, toasted side up, in shallow baking pan. Arrange sliced tomatoes on
top of toast and sprinkle with 1/4 teaspoon salt and pepper. Bake until
tomatoes are thoroughly heated, about 5 minutes. Put on serving plates and
serve at once with cheese sauce.

Makes 4 servings.
