MICROWAVE MEXICAN CASSEROLE 

 

1 lb. ground beef (or turkey or chicken)

1 can Ro-Tel tomatoes with green chilies

1 (10 oz.) can condensed cream of mushroom soup

3 c. crushed tortilla chips

1 1/2 c. shredded cheese (your favorite)

 

Brown meat in microwave, about 4 to 6 minutes, stirring to break up meat 
Drain., add Ro-Tel, tomatoes and cream of mushroom soup. Mix well. Layer chips, 
ground beef mixture, and cheese (one half at a time), in a glass casserole

microwave safe dish. Microwave on high 10 to 12 minutes or until heated 
thoroughly and cheese is melted.
