MOM'S RICE PUDDING

Servings: 6

 

1 cup rice -- cooked and warm

3 large eggs

1/2 cup sugar

1 teaspoon nutmeg

2 cups milk

 

Whisk eggs, sugar and nutmeg together until well mixed.

Add milk and whisk until thoroughly mixed.

Cook over medium heat, stirring constantly until mixture coats a metal spoon.

Add rice and 1 tsp. vanilla. Cover and let sit for about 30 minutes before 
serving.

May be served cold or warm.
