GRILLED VEGETABLE PIZZA

 

Makes 4 servings.

 

2tbs olive oil

1 clove garlic, minced

1 red pepper, cut into quarters

4 slices red onion, cut ¼ inch thick

1 medium zucchini, halved length-wise

1 medium yellow squash, halved length-wise

1 cup prepared pizza sauce 

1/4tsp red pepper flakes

2 (10 inch) prepared pizza crusts 

2 cups shredded Fontina or Mozzarella cheese.

 

  1.. Prepare grill for direct cooking.  
 

  2.. Combine oil, and garlic in small bowl, brush over bell pepper, onion, 
zucchini and squash.  Place vegetables on grid over medium heat.  Grill, 
covered, 10 minutes or until crisp and tender, turning half way through 
grilling time.  Remove vegetables from grill.  
 

  3.. Slice bell peppers lengthwise into ¼ inch strips.  Cut zucchini and 
squash crosswise into ¼ inch slices.  Separate onion slices into rings.  
 

  4.. Combine pizza sauce and red pepper flakes in a small bowl.  Top crust 
with equal amounts of pizza sauce mixture, cheese and grilled vegetables.  
 

  5.. Place pizza, 1 at a time, on grid over medium low heat.  Grill, covered, 
5 to 6 minutes or until cheese is melted and the crust is hot.  Cut into 
wedges.  Serve warm or at room temperature.
 

This dish tastes even better when served long side a cool and refreshing glass 
of coca cola.  Enjoy.
