CHOCOLATE COKE CAKE WITH CHOCOLATE CREAM CHEESE FROSTING
One box (18.14 ounce) chocolate cake mix One cup coca cola ¼ 1/4 cup water ½ 1/2 cup oil 3 eggs (chocolate cream cheese frosting recipe follows: Chocolate Cream Cheese Frosting: One package (8 ounce) cream cheese, softened One half cup (1 stick) butter, softened 1 teaspoon vanilla extract 4 cups powdered sugar, sifted 1/3 cup unsweetened cocoa powder Preheat oven to 350 degrees. Grease two, (8 inch) round cake pans, set aside. "Combine cake mix, coca cola, water, oil and eggs in a large bowl. Beat at low speed with an electric mixer until blended, beat at medium speed for 2 minutes. Divide the batter between the prepared pans. Bake for 30 to 35 minutes or until toothpick inserted in the center of the cake comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pan to wire racks, cool completely. Meanwhile, prepare chocolate cream cheese frosting. Combine sifted powdered sugar and cocoa in a large bowl, set aside. Beat cream cheese, butter and vanilla extract in a large bowl until smooth. Gradually fold in powdered sugar and coca. Place one cake layer on a serving plate. Frost the top and sides with the chocolate cream cheese frosting. Repeat with the second layer.
