Sorry I didn't give enough information.  I use a Sunbeam stand mixer.
Mainly I was wondering if you mix pumpkin or banana nut bread, cakes, pies,
and cookies at different speeds and for different amounts of time.

It's difficult to answer your question accurately without more information.
How long did you beat the cake and at what speed?  Are you using a hand
mixer, or a stand mixer-one that is on the counter)?
Most cakes require three to five minutes of beating and instruct you first
to cream the butter with the sugar, then add the eggs.
I use a Kitchenaid heavy-duty mixer, and put the dry ingredients in the bowl
first, then all the wet ingredients on top.  I start at low speed to blend
everything, then turn it up to medium speed for about three minutes.  
My cakes turn out fine this way.  Cookies get similar treatment, depending
on the stiffness of the dough; I beat them at medium low speed.
