My Cousin Becky's Rich Cocoa Fudge 3 Cups Sugar 2/3 C. Hershey's Cocoa 1/8 tsp. salt 1 1/2 cups milk 1/4 (1/2 stick) butter or margarine 1 tsp vanilla extract Mix together in a heavy 4 quart saucepan sugar, cocoa and salt. Then stir in milk and cook over medium heat. Stir constantly until mixture comes to a full boil. Keep cooking until mixture comes to a soft ball, 234 degrees, or when dropped in a cup of cold water it will form a soft ball. I keep stirring to make sure it doesn't boil over the pan. Remove from stove and add butter and vanilla and stir until completely mixed and fudge loses some of its glossy appearance. Spread on buttered plate (I just use a dinner plate which I butter before I start cooking the fudge). I let set for about 10 minutes and then cut in squares as it is easier than waiting until it cools completely.
