Hi, Kerry, If your block of butter is 1 pound, you can cut it in half and use half; 1 pound of butter is two cups. If you aren't sure, and want an accurate measurement you can fill a two cup measure with one cup water, and add the solid butter, until the water reaches the two cup mark. This will give you an accurate one cup butter. This method of measuring can also be used with any solid shortening. Hope this helps.
