You could grind it up with sweet pickles or add mayonnaise and sweet pickle relish and shredded american or cheddar cheese for a wonderful sandwich spread or use it as an horsd'oeuvres on that party rye bread for special occasions.
Also, ground up chicken could be substituted for ham.
