Hi Kerry,
Your smoked salmon should keep if sealed in a ziplock bag and kept in the 
refrigerator.  As for making a sandwich with it:  I like to spread cream cheese 
on a toasted bagel and top it with slices of smoked salmon.  You can add a 
slice of red onion, some capers, if you like, and enjoy.  A sandwich is one of 
those things that you can make to suit your taste completely.  Rye bread would 
also be good.
