Applesauce Cake
Blend together:
1-3/4 cups flour
1 cup raisins, currents, nuts or dates (I use a combination of half raisins,
half nuts, or one cup dates omitting nuts).
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground cloves (be careful of the cloves as the flavor is strong)
Cream together:
1/2 cup butter
1 cup granulated or brown sugar (firmly pack brown sugar)
Beat in 1 egg.
Combine dry ingredients with the butter and sugar mixture; beat until smooth.
Add 1 cup thick applesauce.
Bake at 350 in a greased tube pan 50-60 minutes.
If you use an 8 inch square pan, the time may vary. Cake is done when a
toothpick inserted in the center comes out clean.
You can frost this cake if you wish; I usually don't. It's good plain.
