Red Velvet Layer Cake with frosting

1 box white cake mix (2-layer size)
1 box (4-serving size) instant vanilla pudding mix
4 large eggs
2 T unsweetened cocoa powder
1 T white vinegar
1 c milk
1/2 c vegetable oil
2 oz red food coloring

Cream Cheese Frosting
4 oz butter, softened
8 oz cream cheese, softened
1 T vanilla
1 box (1 pound) confectioners' sugar
1 c chopped pecans

Combine cake mix, pudding mix, oil, eggs, cocoa, vinegar, oil,
and food coloring
Beat 4 mins on medium speed, scraping sides and bottom of bowl
several times.
Grease and flour 3 cake pans.
Distribute batter among pans evenly.
Bake at 350° 20-25 mins til cake springs back when lightly
touched in center.
Cool cake on racks.

Frosting:
Beat  butter and cream cheese til smooth and light.
Add vanilla and confectioners' sugar
Beat til smooth.
Spread frosting over layers and sides, sprinkling ea layer with
chopped pecans.
