My mother made these when I was a little guy and I still make them for
myself today.
Oh, by the way my mother's name is Marie. (smile)
Sweet Marie Tarts
1 egg
1/2 Cup brown sugar
1 tablespoon corn syrup
2 tablespoons butter, soft
1 teaspoon vanilla
1/2 cup shredded coconut
1/2 cup chopped nuts (walnut or pecan)
24 marashino cherries, cut in half
12 frozen tart shells, thawed
Beat together first five ingredients in mixer.
Add coconut and nuts and mix with spoon gently. Mixture forms a thick syrup
for filling small tart shells.
Put 4 halves cherry into each tart shell, fill shell with a tablespoon of
syrup mixture over cherry. Larger tart shells will hold more syrup mixture.
Place tart shells on metal cookie sheet covered with parchment paper.
Bake at 400'F for 20 minutes.
Tarts may bubble up and spill over if filled too much.
Let cool completely and store in sealed container. Tarts can be frozen for
storage.
*Variation: 18 mini tart shells filled with one whole cherry and half a
tablespoon of syrup filling.
