Ambrosia Macaroons INGREDIENTS
1/2 cup unsalted butter, at room temperature 3/4 cup sugar 1/8 tsp salt 2 tsp orange peel, finely grated 3 large eggs 6 cups sweetened flaked coconut 6 oz bittersweet chocolate DIRECTIONS Line 3 baking sheets with parchment. In large bowl, beat butter until smooth. Add sugar and salt; beat until blended. Beat in orange peel, then eggs, 1 at a time. Mix in coconut. Drop tablespoonfuls of batter onto sheets, 1-1/2 inches apart. Bake in 325F oven, 1 sheet at a time, until tops start to brown, 25 to 30 minutes. Cool completely on sheets. Melt chocolate; drizzle over macaroons with knife. Chill on sheets until chocolate is firm, about 30 minutes.
