Pasta Salad with Spinach, Avocado and Macadamia Nuts Recipe - Recipe

Ingredients
1/2 lb. Nob Hill Trading Co. fettuccine,
cooked and chilled
4 cups lightly packed, coarsely chopped
fresh spinach
3/4 cup coarsely chopped honey roasted
macadamia nuts
1/2 cup chopped red bell pepper
3 green onions, sliced
1 avocado, pitted, peeled and chopped
Lemon Vinaigrette (recipe follows)
Directions
Prep time: 20 minutes
Place all salad ingredients in a large bowl. Drizzle with vinaigrette
and toss well to coat. Serve immediately.
Lemon Vinaigrette:
In a small bowl, whisk together
3/4 cup extra virgin olive oil,
1/4 cup fresh lemon juice,
2-1/2 tsp. sugar,
1/2 tsp. pepper,
1/4 tsp. salt
1/4 tsp. curry powder.
Makes 8 servings.
