Side dishes SQUASH PUPPIES

 

5 medium yellow squash              1 large egg, beaten

½ cup buttermilk                       1 medium onion, chopped

¾ cup self-rising flour               ¼ cup plain flour

 

Trim ends of squash.  Slice and place in pot.  Cover squash 

with water.  Cook on medium heat 20 minutes or until 

tender.  Drain well. Mash and drain again. Combine squash 

and remaining ingredients.  Drop by scant tablespoons into

hot oil.  Fry 5 minutes or until golden brown. Yields 2 ½ 

dozen.
