Low Calorie Streusel-Topped Pumpkin Muffins

The aroma of these streusel-topped pumpkin muffins is exquisite as they

bake. Your entire home will smell of the bounty of fall. While the muffins

themselves

are not overly sweet, the streusel topping makes up for any sweetness you

may be missing!

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

. Streusel Topping:

. 1/4 cup chopped walnuts

. 2 Tbsp brown sugar

. 1 Tbsp melted butter

. 1/4 tsp ground cinnamon

. Muffins:

. 1 cup white flour

. 1 cup whole-wheat flour

. 3/4 cup packed brown sugar

. 1 1/2 tsp pumpkin pie spice

. 1 tsp salt

. 1 tsp baking soda

. 1 cup canned pumpkin

. 1/2 cup plain low-fat yogurt

. 1/4 cup canola oil

. 2 large eggs, beaten

. 1 tsp vanilla extract

Preparation:

1. Preheat the oven to 350°F.

2. To prepare the streusel, combine the first four ingredients in a small

bowl, and set aside.

3. In a large mixing bowl, combine the dry ingredients (flour through the

baking soda). In a smaller mixing bowl combine the remaining five

ingredients.

Stir the pumpkin mixture into the flour mixture, and mix with a large spoon

until moistened.

4. Spray a muffin tin with non-stick cooking spray, and fill each muffin

space 3/4 full with the batter. Sprinkle the streusel topping evenly over

each

muffin.

5. Bake the muffins for 20 minutes, or until a toothpick inserted in the

middle comes out clean. Remove from the oven, and cool in the muffin tin for

5

minutes. Transfer the muffins to a cooling rack, and cook completely.

Makes 12 muffins
