Okay, I adapted this recipe. It originally called for everything here but the butter beans. I'm hoping the modification turns out well. I love butter beans, so that's what spawned the name Yum Sauce. <grin> You could probably substitute rice, potatoes, green beans, or any other starchy veggie you prefer.
Bacon-wrapped Chicken Chunks with Yum Sauce 3 to 4 uncooked large boneless, skinless chicken breasts 1 pound uncooked reduced sodium bacon 1 16 oz. container light sour cream 1 10.75 oz. can reduced sodium cream of chicken soup 2 14 oz. cans butterbeans, partially drained 2 table spoons flour Black Pepper and Garlic powder to taste 1. Open butter beans and strain out approximately 1/2 liquid into medium bowl. 2. Empty partially drained beans into bottom of well greased crock pot. 3. Cut chicken breasts into bite size chunks. 4. Cut each uncooked bacon strip into several small pieces, large enough to wrap around each chicken chunk at least once. 5. Roll bacon pieces tightly around chicken chunks. 6.. Yum sauce: Combine liquid from butter beans, sour cream, chicken soup, flour and salt and pepper and mix well. 7. Layer Yum Sauce and chicken pieces until all but a few spoonfuls are gone. 8. Place remaining bacon on top and cover with excess Yum sauce. Cover crock pot and cook on high 4-5 hours or low 8 to 10 hours. Enjoy. Serves 4 to six.
