Fall Harvest Cake 1-1/2 C. sugar 1/2 C. brown sugar, Packed 2 tsp. cinnamon 2 tsp. Baking Soda 1/4 tsp. Nutmeg 1/4 tsp. ground Ginger 1 C. oil 1/2 tsp. Vanilla extract 4 eggs 2 C. all-purpose flour 15 oz. Can pumpkin or 2 Cups 1 apple. Cored, peeled & chopped 1/2 C. chopped pecans
Mix the first 10 ingredients together; add flour, 1/2 cup at a time. Blend in pumpkin; fold in apple and pecans. Pour into a greased & floured Bundt pan; bake at 350ยบ for 70 minutes. Cool 20 minutes in the pan; remove & complete cooling on a wire rack. Frost when cool. Serves 12 Frosting 2 tsp Vanilla extract 1/2 C. butter, softened 8-oz package cream cheese, softened 3-1/2 C. powdered sugar Blend Vanilla, butter & Cream Cheese together; add enough powdered sugar until desired spreading consistency is reached.
