I have a hunch that this is a soft sugar cookie dough anyway, and the recipe
does say to bake just until set.  If you want something firmer, you might do
better just to use a standard sugar cookie recipe.

The fault might be with the mix itself.  I have heard of problems with some
mixes not turning out well even though the directions were followed to the
letter.

I am not a fan of mixes anyway, so would not use a cookie recipe based on a
mix.  This is not to say that I never use a mix, but for the most part, my
preference is to bake from scratch.  Then you know all the ingredients in
the final product.

That being said, you could use a tried and true sugar cookie recipe and add
the cocoa and red food coloring to make the red velvet cookies.  Good Luck!
