Hi Jeri and all, The tortilla in this case is the potatoes and eggs after they become an omelette. Not what we in the states call a tortilla which is more along the lines of Mexican cooking. If you are going to make this dish, I'd suggest having sighted assistance flipping the tortilla the first few times. It took me a while to get the hang of it, I use a special plate to accomplish this. I'm sorry I forgot to include this in the instructions. Thanks to my wonderful husband who told me the name of this plate. It is special because it has a handle on the bottom. This allows more control over the flipping process since I grip the pan with my right hand, and the plate with my left, holding both handles securely. Try doing this move with nothing in the pan. I practiced with an empty pan for a while. The name of this special plate is called Vuelve Tortillas. You can find it at a place called latienda.com. I will post a recipe for Gazpacho later in the week. I love tortilla de patatas it was the fi rst dish my husband made for me, when we were engaged.
