Italian chicken casserole (my way)
half a chicken breast, skinned and deboned)
Cut into bite size pieces
1 medium onion (cut into rings)
four small potatoes ( cut into pieces)
Layer the onions rings in a sprayed casserole dish. Quarter the potatoes
Lay chicken pieces among potatoes.
Put a slice of fresh garlic on chicken pieces.
Add a little salt, fresh ground black pepper, oregano, crushed red pepper
and basil to taste, over dish. If I had fresh tomatoes I would have use
them, but seeing I didn't I drain the juice off a can of sliced tomatoes and
layered the tomato slices over everything.
Will bake at 350
Degrees F for about 45 to a hour or until chicken and potatoes are done.
