Crockpot Mix veggies
1 sweet red pepper
1 sweet green pepper
1 sweet potato peeled.
1/2 red onion
1
1/4 cup olive oil
1/8 c of vinegar
Basil, oregano,, salt and pepper to taste.
Cube the sweet potato
bite size pieces of peppers
quarter the 1/2 onion into four pieces.
Mix in the Italian salad dressing and put in small crockpot on low
for
2 1/2 hours or until veggies are tender.
