My ex and I used to freeze the dough in a gallon zip lock bag. I'd divide it into parts, so that each crust was in its' own separate ball. Then, I'd take a piece out, let it defrost and then roll it out to the desired thickness. I'm not sure why yours fell apart. I've also found that adding olive oil to the dough before rolling it out, keeps it elasticky and soft. It's also less likely to either stick to your rolling pin or to break. Add more, if it starts sticking.
