A Lightened Up Apple Oat-Quick Bread

Yield: 10 servings

 

Ingredients:

1 cup quick or old fashioned oats, uncooked

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground allspice

1/3 cup honey

1/4 cup skim milk

1/4 cup vegetable oil

1 egg

2 apples, diced

 

Directions:

1.      Preheat oven to 350°.
2.      In large bowl, combine first 5 ingredients and stir well.
3.      In a medium bowl, beat next 4 ingredients until creamy. 
4.      Stir wet ingredients into flour mixture just until flour is
moistened (batter will be lumpy). Fold in apples.
5.      Transfer batter to a lightly buttered 4x8 inch loaf pan and bake
50-60
minutes or until tester comes out clean when inserted in center.



 

Note:  Because this recipe is for a particular size pan, it adjusts the
number of servings only in multiples of 10.
