My mom always made two different types of potato salad. And I think it was because she didn't like mayonnaise. She never gave me amounts. The one with mayonnaise, which I've made, had celery, onions and hardboiled eggs. The other one had vinegar and oil, which she'd mix together as a dressing and it had oregano. It didn't have any onions because she didn't like them and no hardboiled eggs.
