My suggestion for first-time use of a gas stove is to turn it out
without a pot or pan on the burner.  Hold your hand well above the
flame.  Turn the knob all the way up.  Keep your hand above the flame;
gradually turn the knob down.  You'll be able to get a sense of the
heat differences when the flame is high, medium and low.  Turn it off
before placing a pot or pan on the burner.  Then gradually turn the
knob and adjust it for the type of flame called for in your recipe.

I hope that made sense.  I grew up using a gas stove, but the second
apartment I lived in had an electric stove and oven.  I hope to
goodness I never have to use an electric stove and oven again.  I
don't like the texture of food cooked with electricity.
