Ham and left over ham meals (just a few)
One of the things I like about ham is the many different things that can be done with the left over's.
Seldom do I buy a boneless ham.
And bean soup is the reason why.
I bought a 8 pound spiral ham and first cooked it in the crockpot on low for about 5 hours. The temp I was looking for was 140 f degrees. It was @ 148 when I took it out. First I added 1 cup of apple cider to the pot and than 1 cup of brown sugar and rubbed half of the envelope contents on the ham , other half rubbed on ham about 3/4 hours before taking it out of the crockpot. And put it face down and forgot it.
That was one meal.
Than yesterday ham sandwiches.
now the bean soup.
Most people soak their beans over night I don't.
chopped up one large onion
2 large carrot
2 sticks of celery.
Added a little olive oil to the pot and sweated the above until soft. About 8 to 10 minutes.
Than added one can of chicken broth and 3 cans of water (14 1/2 ounces)
Put in the ham bone. And 2 cups of dried northern beans.
Added 1 1/2 tablespoon of chicken bullion and a couple bay leaves.
Seasoning:
Oregano, basil, black pepper, and a little salt to taste.
As the beans are cooking on a low simmer I add more water as needed to fit my taste. So far 4 cups full.. Will cook them until beans are tender to suit my taste. About 6 hours on a low simmer. With the bean soup, nothing like fresh baked bread. Today, I made the bread Cuban style. Tomorrow with the left over bean soup, will cook some elbow, or pe pe macaroni and add it to the soup. And have pasta fagioli
