Slow Cooker- Easy Baked Apples Makes 12 servings Prep. Time: 30 minutes Cooking Time: 2-4 hours Ideal slow-cooker size: 6-quart 12 small, crisp apples 1/2 cup raisins 1/2 cup chopped nuts-walnuts or pecans work well 1 cup brown sugar 1/2 tsp. nutmeg 1 tsp. cinnamon 3 slices fresh lemon 2 tsp. lemon juice 11/4 cups boiling water Wash the apples and core them while keeping them whole. Starting at the stem, peel each one about halfway down. In a small bowl, stir the raisins and chopped nuts together. Spoon some of the mixture into each apple, dividing the raisins and nuts evenly among the apples. Stack the stuffed apples into the slow cooker, but not squarely on top of each other. Do your best to have them sit upright. Combine the sugar, nutmeg, and cinnamon in a small saucepan. Add the lemon slices and lemon juice and pour boiling water over everything. Boil the ingredients together for about 5 minutes. Pour the syrup over the apples in the slow cooker. Cover. Cook on Low 2-4 hours, or until the apples are as tender as you like them.
