A lady, who is not blind, said she takes the baking pan after it is filled with the batter and shakes the pan a little, but in addition she tips the pan one way and then tips the pan the other direction. Then you can give the batter a feel test. You might try running the back of a spoon over the batter and that would be helpful to achieving level batter.
