This wasn’t in with the group of other recipes I had sent, but its from the same era.
RASPBERRY OATMEAL BARS INGREDIENTS: 2 Cups Quaker Oats (uncooked). 1 Cup All Purpose Flour. ¾ Cup Margarine or butter melted. 1 Large egg, lightly beaten. 1/3 Cup firmly packed brown sugar. 1/3 Cup chopped Walnuts (optional). 1 TBSP Vanilla Extract. ½ TSP salt (optional). ½ TSP Baking Soda. 1 10 to 12-OZ jar Preserves such as Raspberry, Blackberry or Strawberry. DIRECTIONS: Preheat oven to 350 Degrees. Grease an 11 by 7-inch baking dish. In a large mixing bowl combine all dry ingredients being sure to mix well. In a separate bowl beat egg and add vanilla and melted butter; pour into dry mixture. Mix well. The mixture will be on the dry side. Reserve ¾ cup of Oat mixture and set aside. Press and spread the remaining mix evenly into baking dish. Bake for 10 minutes then remove from oven. Gently, spread the preserves evenly over the partially baked base. Sprinkle with the ¾ cup Oat mixture held in reserve. Return to oven. Bake an additional 20-22 minutes or until golden brown.
