Gently fold in cranberries, carrots and nuts. Combine dry ingredients; add to fruit mixture. Toss to moisten. Combine eggs and oil; add to fruit mixture and stir just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 375 degrees for 20 to 25 minutes until muffins test done. Cool for 5 minutes before removing from pan.
