Goof Proof Popovers 1 tablespoon shortening or nonstick cooking spray
2 eggs, beaten 1 cup milk 1 tablespoon cooking oil 1 cup all-purpose flour 1/4 teaspoon salt Preheat oven to 400 degrees. Grease bottoms and sides of 6 (6 ounce) custard cups or 6 cups of a popover pan, using 1/2 teaspoon shortening per cup, or spray cups generously with nonstick cooking spray. If using custard cups, place them on a 15 by 10 by 1 inch baking pan. In a medium mixing bowl, beat eggs slightly with whisk or fork. Stir in milk and cooking oil. Add flour and salt. With whisk or rotary beater, beat egg-flour mixture until smooth (batter will be thin). Transfer batter to a 2 cup glass measure. Pour batter into greased cups, filling half full. Bake about 40 minutes, or until golden. Do not open oven door during baking. Immediately after removing popovers from oven, prick each with a fork to let steam escape. If crisper popovers are desired, return popovers to oven for 5 to 10 minutes more. Remove from cups and serv while hot. Makes 6 popovers.
