Fresh Strawberry Bread 1 pint fresh strawberries
1 1/4 cups all-purpose flour 1/4 teaspoon baking powder 1 teaspoon baking soda 3/4 teaspoon salt 1/2 teaspoon cinnamon 1 cup sugar 1/3 cup shortening 2 eggs 1/4 teaspoon vanilla 1/3 cup water 1/2 cup chopped walnuts Cream cheese, optional Crush enough berries to measure 1 cup; pour into saucepan and heat to boiling. Cook for 1 minute, stirring constantly; cool. Slice remaining strawberries; chill. Combine flour, baking powder, baking soda, salt and cinnamon; set aside. Cream together sugar, shortening, eggs and vanilla until light and fluffy; add dry ingredients alternately with water. Stir in crushed strawberries. Fold in walnuts. Spread batter into greased 9 by 5 by 3 inch loaf pan. Bake at 350 degrees for 50 to 60 minutes; cool for 10 minutes before removing from pan. To serve; slice, spread with cream cheese and top with reserved sliced strawberries.
