Easy Chex®Carrot Bread
Preparation time: 15 Minutes Servings: 2 loaves Perfect for breakfast, this quick-bread is moist and delicate with the sweet flavor of apples and carrots. Also try it layered with cream cheese and sliced fruit or chicken for a satisfying snack or light lunch. Ingredients .2 cups all-purpose flour .1 cup crushed Triple Chex® Cereal .1 1/2 teaspoons baking powder .1 teaspoon baking soda .1/2 teaspoon salt .1 teaspoon ground cinnamon .1 teaspoon ground ginger .4 eggs .1 teaspoon vanilla extract .1 cup buttermilk .1/2 cup vegetable oil .1 1/4 cups brown sugar .2 cups shredded carrots .1 cup walnut pieces .1 cup grated apple Direction 1.. Preheat oven to 350°F. Grease two loaf pans. 2.. In a large bowl, sift together flour, cereal, baking powder, baking soda, salt, ginger and cinnamon. 3.. In a separate bowl, combine eggs, buttermilk, vanilla, oil and brown sugar; beat well. Combine egg mixture and flour mixture; mix just until moistened. 4.. Fold in carrots, walnuts and apples. Pour into loaf pans. 5.. Bake for 45 to 50 minutes, or until a cake tester inserted in the center comes out clean.
