This is our version. 

Ingredients:
2 Pimento peppers, stemmed and seeded
1 pinch about 1/2 tsp. all purpose seasoning your choice 
note: this keeps it light on the salt since the cheese has a lot.)
4 cups of cheese

 (note: you can use any cheese that melts easily. The star must be Sharp 
cheddar cheese, grated)
1 cup mayonaise
1/2 cup diced tomatoes (optional)
Mix everything together with a hand mixer. Place in the refrigerator for an 
hour or two for the flavours to combine.
Makes about 1/2 quart.
