NOTE: FOR A SPICIER DISH, USE A "HOT" SAUSAGE INSTEAD OF "MILD." What is tasso? Tasso is a south Louisiana specialty meat product made from the pork shoulder. It is typically fatty with a lot of flavor. It's cut into three or four-inch pieces, briefly soaked in a salt mixture, and left to cure three or four hours. It is then rinsed, rubbed with a spice mixture containing cayenne pepper, garlic, and other seasonings, and hot-smoked until cooked through. It is not eaten on its own, but used to enhance the flavor of meals. 1 lb. smoked link sausage, sliced into bite-size pieces and browned 1/2 lb. (8 oz.) smoked pork tasso, diced and browned 2 lbs. white or red potatoes, peeled and diced 7 cloves garlic, chopped, or to taste 1 small onion, chopped 1 tsp. Cajun or Creole seasoning 1 stick butter, chopped 1 (1-oz.) envelope onion soup mix 2 cups (16 oz.) water Add all ingredients to rice cooker, stir, cover and press down COOK switch. Once meal is cooked, and the COOK switch pops up to WARM mode, uncover, stir well, and serve hot. Cooked for 52 minutes and made up to the 6-cup level.
